This recipe could NOT be any simpler. You only need 2 ingredients, and you most likely already have them in your kitchen. Adding some little extras to the dish, and you can have yourself a very healthy and tasty breakfast (or, any meal of the day really!)

Ingredients

  • 1 ripe banana
  • 1-2 eggs
  • 1/4 tsp cinnamon / nutmeg (optional)
  • Maple Syrup (optional)
  • Fresh berries or sliced fruit (optional)

Instructions

  1. Mash up 1 banana (try to get as many chunks out as you can)
  2. Add 1 (or 2) egg(s) and mix well
  3. Add cinnamon or nutmeg if you like
  4. Heat a pan with about a tsp coconut oil or butter. Poor mixture and form into pancake shapes (I can usually get about 3-4 pancakes)
  5. Let cook for 2 minutes per side
  6. Flip carefully between flipping! Don't mind the dark colouring (its from the sugars in the bananas)
  7. Add maple syrup and berries for an added touch

Notes

If you don't mind them being less sweet, you can do this same recipe using 2 eggs - you'll get more pancakes
